Sweet Tooth

We've been making homemade ice cream lately and it is so good! We use an attachment for our mixer--it's not too difficult, just time consuming. We've only done it twice and can't wait to try more flavors!
Start with egg yolks and sugar in the mixer

Heat half and half, then add to the egg yolk mixture, and heat again
Chill mixture for at least 8 hours. Then pour into the "freezer bowl" and churn for 20-30 minutes.
When it comes out, it's more like a milkshake consistency. (The 2nd time we made it, we chilled the batter longer and it was much thicker)
Let it set and freeze for 4-6 hours. We added oreos this time and it was great!!

My friend Mary Frances and I made Nikki's Healthy Cookies a few years ago and it's still a recipe I love. They seems really natural and healthy--and I love the combination of chocolate, oats, coconut, and banana. Some ingredients, like almond meal and coconut oil, you may not have in your pantry, but you can easily find them at places like Trader Joes or Whole Foods. They turn out as more of a soft cookie and they are really tasty!
The ingredients: banana, coconut, vanilla, cinnamon, rolled oats, almond meal, salt, baking powder (plus dark chocolate bar and coconut oil)
Yum!
